Ingredients:
Chili Paneer
1lb paneer cut in cubes and lightly fried
4tbs light olive oil
2 tbs crushed garlic
1tbs crushed ginger
2 Thai green chili slit
1 medium onion cubed
1 green bell pepper cubed
1 red bell pepper cubed
1/2 cup water
1/4 cup chopped cilantro
Mix to make a Slurry
3 tbs Soya Sauce low sodium
1 tbs corn starch
1 tbs sriracha
Juice of 1 lemon
1tsp mustard
To Serve
Endive hearts
Fried rice sticks
Sliced green onions
Preparation Instructions
Take light olive oil and heat in wok
Add garlic and ginger and fry for 1 min on medium low heat
Add onions and sauté for 5 mins. on medium high heat
Add all the bell peppers and sauté another 5 mins.
Add the slurry and mix well
Add 1/2 cup of water and combine
Add paneer cubes and mix well.
Let the above simmer for 3 mins.
Add cilantro. Taste and adjust spices and soy sauce per your taste.
Cool the above slightly.
To Serve
Cut ends of endive hearts and separate into individual leaves.
Place in ice water for 10 mins. Drain and pat dry.
Spoon mixture into endive leaves, sprinkle green onions, and fried rice sticks
Serve immediately
