Part 1: Dhokla Batter
Blend the following Ingredients:
2 cups chana daal
3/4 cup chana flour
2.5 cups of buttermilk
2 teaspoon green chili
1/4 cup cooking oil
1/4 cup sugar
1/2 teaspoon turmeric
Salt to taste
Set aside for at least 8 hours to ferment
Part 2: Pea Kachori Masala
While the Dhokla batter ferments, begin making the Pea Kachori Masala to accompany it
Ingredients:
4 cup frozen peas
1 Serrano pepper
3 tbsp lemon juice
3 tbsp of sugar
3 tsp fennel seeds
1 tsp black mustard seeds
2 tbsp cooking oil
Pinch of hing
1/2 teaspoon turmeric
Salt to taste
Steps:
Food process peas.
Heat oil in a non stick pan.
Add mustard seeds pinch of Hing, turmeric. When seeds crackle add food processed frozen peas, green chili, sugar, salt, lemon juice
Cook at low heat for 10 minutes, stirring occasionally.
Set aside to cool.
Part 3: Preparing the Dhokla
6 inch plate - place 1/4 cup of the batter into the plate. Add fruit salt to the batter
In a pot place water to boil and add plate that fits into the pot. Baste the plate with cooking oil or Pam spray. In a small bowl take 1/4 cup of dhokla batter. Add 1/8 tsp eno and mix well.
Pour Dhokla batter in the prepared plate the layer should be no more than 1/8 inch. Steam for 7 minutes
Remove it from the steamer Gently Peel the steamed layer from the plate and Flip it upside down
